Year 8 Food Technology classes have been experimenting with alkali’s and acids to create Rainbow Noodle Bowls.
Boiling purple cabbage released the anthocyanin pigment into the water which was used to dye rice noodles to a purple colour. When mixed with lemon juice (an acid) or bi-carb soda (an alkaline) the noodles transformed to pink and blue before our eyes. We then stir-fried tofu and vegetables to create a colourful, vegan salad.
